These simple and delicious Garlic Butter Miso Noodles come together with just 4 ingredients in about 15 minutes. This flavorful recipe is ideal for busy weeknights or a quick satisfying lunch. I love the blend of Japanese and Italian flavors from the buttery, garlicky sauce with umami-packed miso. Fans of buttered pasta will be obsessed with this twist on the classic dish!

Pasta Water: Always reserve some pasta water before draining! The starchy water helps thicken and bind the sauce to the noodles, creating a silky smooth finish. While I typically salt my pasta water, for this recipe I didn’t, as the salted butter and white miso provide plenty of saltiness.

Salted Butter: Feel free to use unsalted butter if you prefer. If using unsalted butter, I recommend salting your pasta water and tasting the pasta before serving. Add a sprinkle of salt to taste if needed.

Japanese Chili Oil: I prefer using S&B La-Yu, a Japanese chili oil that adds great flavor without being too overpowering or spicy. It perfectly complements the savory miso, enhancing the dish with a subtle heat.

Step 1: Cook the pasta to al dente according to package instructions. Reserve pasta water before draining.

Garlic Butter Miso Noodles (Only 4 ingredients!)

Instructions 

  • Cook the pasta to al dente according to the package instructions. Before draining, reserve 1 cup of pasta water and set it aside.
    8 oz Spaghetti
  • Meanwhile, in a large pan, melt 2 tablespoons of salted butter over medium heat. Add the minced garlic and sauté for 1 minute, stirring frequently until fragrant.
    4 tablespoon Salted Butter, 4 cloves Garlic
  • Stir in the miso paste and cook for 2 more minutes, allowing it to slightly caramelize. Pour in about ½ cup of reserved pasta water, stirring to dissolve the miso and create a smooth sauce.
    2 tablespoon White Miso, 1/2 cup Pasta Water
  • Add 2 more tablespoons of cold salted butter, stirring until melted. Then, add the cooked pasta and toss to coat. If needed, add another splash of pasta water to help the sauce evenly coat the noodles.
    4 tablespoon Salted Butter
  • Divide among bowls and serve immediately. Garnish with Japanese chili oil, Furikake seasoning, green onions, and a soft-boiled egg as desired.
