One Pot Caramelized Onion Rigatoni

This recipe is extra flavorful from the caramelized onions and all cooks in one pot!

  • Heat butter in a dutch oven or large pot over medium heat. Add onions and a large pinch of salt and cook over medium low heat stirring occasionally until caramelized. This can take around 45 minutes.
  • Once the onions are caramelized, stir in minced garlic and mushrooms. Cook for a few minutes then pour in white wine. Scrape up the brown bits on the bottom of the pan.
  • Add uncooked rigatoni and chicken broth. Stir to combine. Add salt, pepper, and Italian seasoning. Let it come to a boil then turn the heat down to medium. Cook stirring often for about 15 minutes or until pasta is cooked and most of the liquid is absorbed.
  • Turn off heat. Add Boursin cheese and stir well to combine until completely melted and smooth. Serve immediately with freshly grated parmesan cheese.
