One Pot Caramelized Onion Rigatoni

One Pot Caramelized Onion Rigatoni
Equipment
- Dutch Oven My Le Creuset Dutch Oven is my favorite!
- Chef Knife I'm obsessed with my Made In Chef Knife
Ingredients
- 2 tablespoon Butter
- 2 Yellow Onion, large, thinly sliced
- 1/2 teaspoon Kosher Salt, more to taste
- 3 cloves Garlic, minced
- 8 oz Mushrooms, I used Trader Joe's Mushroom Medley from the frozen section; can also use fresh white or cremini mushrooms
- 1/4 cup White Wine, dry
- 8 oz Rigatoni, uncooked
- 3 cups Chicken Broth
- 1/2 teaspoon Black Pepper
- 1 teaspoon Italian Seasoning
- 3 oz Garlic & Herbs Boursin Cheese, use flavor of your choice; I like garlic & herb or shallot & chive
- Parmesan cheese, freshly grated to serve
Instructions
- Heat butter in a dutch oven or large pot over medium heat. Add onions and a large pinch of salt and cook over medium low heat stirring occasionally until caramelized. This can take around 45 minutes.
- Once the onions are caramelized, stir in minced garlic and mushrooms. Cook for a few minutes then pour in white wine. Scrape up the brown bits on the bottom of the pan.
- Add uncooked rigatoni and chicken broth. Stir to combine. Add salt, pepper, and Italian seasoning. Let it come to a boil then turn the heat down to medium. Cook stirring often for about 15 minutes or until pasta is cooked and most of the liquid is absorbed.
- Turn off heat. Add Boursin cheese and stir well to combine until completely melted and smooth. Serve immediately with freshly grated parmesan cheese.
