Heat olive oil in a small pot over medium-high heat until shimmering. Add the diced onion and cook, stirring occasionally, for 4–5 minutes or until softened. Add the minced garlic and cook for about 30 seconds, or until fragrant.
Add the black beans, chipotle pepper, adobo sauce, cumin, oregano, and bay leaf. Pour in enough water to just cover the beans and stir to combine. Bring to a boil, then reduce the heat and simmer for 15–20 minutes, or until the beans are tender and heated through.
