1/3 cup Brown Butter Breadcrumbs Click the link for my recipe!
12 oz Pasta I used Gigli, but any short cut such as penne or rigatoni will work
1 cup Pasta Water reserve before draining the pasta
1 tablespoon Unsalted Butter
1/2 Yellow Onion chopped
3 cloves Garlic minced
2 tablespoon Tomato Paste
1 tablespoon Calabrian Chili Paste adjust to taste
1/4 cup Vodka can also use water or broth
15 oz Tomato alla Vodka Cannellini Beans see note
1/4 teaspoon Granulated Sugar
Kosher Salt & Black Pepper to taste
Parmesan Cheese freshly grated to serve

Instructions

Make brown butter breadcrumbs and set aside for serving. My recipe is linked.
Meanwhile, cook pasta according to package instructions. Make sure to set aside about 1 cup of pasta water before draining.
Melt butter in a large high-rimmed pan over medium heat. Add the chopped onions. Cook, stirring often, for 4 minutes. Add the minced garlic and cook, stirring often, for another minute.
Add the tomato paste and Calabrian chili paste. Stir to combine with the onions and garlic. Cook for 4 minutes until darkened in color. Pour in the vodka to deglaze the pan. Scrape the bottom of the pan with a wooden spoon to release any stuck bits. Let the vodka cook off for 2-3 minutes.
Pour in the tomato alla vodka cannellini beans. See note below if you're using regular cannellini beans. Season with sugar, salt, and pepper. Cook for 5 minutes, stirring occasionally.
Transfer over 1/2 a cup of pasta water and the cooked pasta. Stir to combine well. Add additional pasta water as needed.
Divide among bowls and top with brown butter breadcrumbs and freshly grated parmesan cheese.

Notes

Note: I used 1 can of Tomato alla Vodka Cannellini Beans from Heyday Canning Co. These are cannellini beans in a tomatoey slightly creamy sauce. You could also use a can of regular cannellini beans and add about 1/4 cup of crushed tomatoes and 1/4 cup of heavy cream or coconut milk. Add salt, pepper, red pepper flakes as needed for flavor.
