Cook the pasta to al dente according to the package instructions. Before draining, reserve 1 cup of pasta water and set it aside.
8 oz Spaghetti
Meanwhile, in a large pan, melt 2 tablespoons of salted butter over medium heat. Add the minced garlic and sauté for 1 minute, stirring frequently until fragrant.
4 tablespoon Salted Butter, 4 cloves Garlic
Stir in the miso paste and cook for 2 more minutes, allowing it to slightly caramelize. Pour in about ½ cup of reserved pasta water, stirring to dissolve the miso and create a smooth sauce.
2 tablespoon White Miso, 1/2 cup Pasta Water
Add 2 more tablespoons of cold salted butter, stirring until melted. Then, add the cooked pasta and toss to coat. If needed, add another splash of pasta water to help the sauce evenly coat the noodles.
4 tablespoon Salted Butter
Divide among bowls and serve immediately. Garnish with Japanese chili oil, Furikake seasoning, green onions, and a soft-boiled egg as desired.
Japanese Chili Oil, Furikake Seasoning, Green Onion, Soft-Boiled Egg
