1 tablespoon Extra Virgin Olive Oil
1 lb Ground Italian Pork Sausage sweet or hot; remove from casing if using links
1 Yellow Onion diced
4 cloves Garlic minced
1 teaspoon Red Pepper Flakes optional; more or less to taste
Kosher Salt & Black Pepper to taste
1 tablespoon Calabrian Chili Paste I used the Italian Bomba sauce from Trader Joe's; more or less to taste
3 tablespoon Tomato Paste
1/4 cup Vodka
28 oz Crushed Tomatoes I used 1 can of Crushed Fire Roasted Tomatoes
3 cups Chicken Broth
10 oz Cheese Tortellini
1 cup Heavy Cream
Fresh Basil to serve
Parmesan Cheese freshly grated

Instructions

Heat olive oil in a Dutch oven or large pot over medium heat. Add the italian sausage and break it up into small pieces with a spoon. Cook for 3 minutes then add the diced onion. Cook for 4 minutes, until the onions are softened. Add the minced garlic and cook another minute.
Optionally add red pepper flakes and season to taste with salt and pepper.
Add the calabrian chili paste and tomato paste. Stir to combine and cook for 5 minutes until darkened in color. Pour in the vodka to deglaze the pot. Scrape any stuck bits on the bottom of the pan with a wooden spoon. Let the vodka cook off for a couple minutes.
Pour in the crushed tomatoes and chicken broth. Bring to a boil then simmer for 10 minutes.
Add the tortellini and simmer another few minutes until they are cooked through. Finally, pour in the heavy cream and stir to combine.
Divide into bowls and serve with fresh basil and grated parmesan cheese.
