Italian Sausage Tomato Cream Sauce Rigatoni

I’m a sucker for all things tomato mixed with cream. Chicken tikka masala, penne alla vodka, creamy tomato soup – you name it. Therefore, I naturally loved this pasta recipe I created that combines hot Italian sausage mixed right into a delicious tomato cream sauce. This recipe requires very little prep. Just mince up some shallots/garlic and measure a few other ingredients. This dish has pasta, Italian Sausage, and spinach all in the same pot so you easily have a complete dinner. Serve your whole family, a group of friends, or make this as a yummy meal prep for the week. This Italian Sausage Tomato Cream Sauce Rigatoni would also pair nicely with some crusty bread and/or a side salad.

Feel free to modify to your liking by substituting heavy cream instead of half and half for an even creamier tomato cream sauce. Similarly, the amount of half and half or heavy cream can be adjusted to your preference. I hope you enjoy!

Hot Italian Sausage Tomato Cream Sauce with Rigatoni

Hot Italian sausages mixed with tomatoes create a spicy and flavorful tomato sauce while a splash of cream creates perfect balance and just enough richness. Add in plenty of spinach and herbs of your choice for freshness and a complete meal.

Ingredients 

Instructions 

  • Heat olive oil in a large sauté pan or Dutch oven over medium heat. Add minced shallots and garlic and cook for 2 minutes until fragrant.
  • Add Italian sausage to pan and break into small pieces with a wooden spoon. Sauté for several minutes until sausage is almost cooked.
  • Pour in white wine and simmer for a few minutes. Next, mix in tomato paste and stir frequently and cook about 5 minutes until the tomato paste starts to darken and caramelize.
  • Pour in tomato sauce then add in Italian seasoning, basil, salt, and black pepper. Stir to combine and let simmer for about 10 minutes.
  • Lower heat and ad cream, stirring until combined. Add in baby spinach and mix into sauce until wilted.
  • Meanwhile, cook rigatoni and add directly to the sauce once al dente. Combine with the sauce. Stir in some starchy pasta water as needed to loosen up the sauce.
  • Plate the pasta and serve with grated parmesan and fresh herbs as desired.
