These Peanut Butter Chili Oil Noodles may be my new favorite quick lunch or dinner. The whole meal comes together in about the amount of time it takes to cook noodles. Just make the sauce in the same bowl you'll eat out of while the noodles cook. I think you may crave these for a quick lunch or dinner everyday as well once you try them!

Peanut Butter Chili Oil Noodles Details

I used this recipe for the chili oil. It's fairly easy to make chili oil at home and you can make a big batch at once so you can quickly add it to recipes like this one! You can also use store bought chili oil.

Chili oil noodles are often made with Chinese wheat noodles, but I recently discovered that bucatini is PERFECT for these types of dishes. Bucatini is a type of long, cylindrical pasta that is similar to spaghetti, but with a thicker and hollow center. It has a slightly chewy texture and pairs well with a saucy dish because the hollow center absorbs some of the sauce for even more flavor. It may sound a little strange, but I recommend trying it for yourself!

Recipe Ingredients

Sauce Ingredients

  • 2 tsp Creamy Peanut Butter - a natural creamy peanut butter will work best for this recipe.
  • 1 tbsp Chili Oil - adjust for your spice preference. I used this recipe for the chili oil.
  • 1 tsp Light Soy Sauce
  • 1 tsp Dark Soy Sauce - In Chinese cuisine, dark soy sauce is often used for its color and flavor to add depth to the dish. You can also use only light soy sauce.
  • 1 tsp Black Vinegar - if you can't find black vinegar, you can use rice wine vinegar. The flavor will be different but it will still add an acidic element to the sauce.
  • 1/2 tsp Hoison - Hoisin sauce is a thick, dark, sweet and savory sauce that is commonly used in Chinese cuisine. It is made from a combination of soybeans, sugar, garlic, chilies, and various spices, such as star anise and cinnamon. It adds a nice level of salty and sweet to the sauce.
  • 1/2 tsp Sesame Oil

Other Ingredients

  • 4 oz Noodles 
  • Splash of Noodle Water 
  • Sesame Seeds, Sliced Cucumber, Sliced Green Onion - modify the toppings you serve with as desired! Add some protein such as chicken or shrimp, or other vegetables you have on hand.

Recipe Instructions

  1. Cook noodles according to package instructions. I used Bucatini and cooked them in a wide sauté pan in about an inch or two of water. This creates super starchy pasta water which is great for adding to the sauce.
  2. Meanwhile, mix all sauce ingredients together in a bowl until a smooth sauce is formed. Add a splash of the noodle cooking water in as well.
  3. Transfer the cooked noodles to the sauce and toss until well combined.
  4. Serve immediately. Optionally top with toasted sesame seeds, sliced green onions, and sliced cucumber.

  • Splash of Noodle Water, reserve from the pan the noodles cook in
