Sour Spicy Cold Noodles with Cucumber

This Sour Spicy Cold Noodles with Cucumber recipe is a perfect recipe to have on hand on a hot summer day! They are light, refreshing, but still very flavorful. You could serve this as a light main course or as a yummy side dish. These noodles would be a great pairing for my Baked Hoison Chicken Thighs!
I love using a couple packs of Ka-Me Hokkien Stir-Fry Noodles to make this recipe because they allow this recipe to be truly "no-cook". You don't need to turn on your stove! You can simply puncture a few holes in the plastic wrapping, microwave for 1 minute (the package instructions suggest 90 seconds, but I think 1 minute is perfect), rinse under cold water, and toss with the sauce.

Sour Spicy Cold Noodles Ingredients
- 14 oz Ka-Me Hokkien Stir-Fry Noodles I used two packs. Or use noodles of choice
- 6 oz Cucumber julienned
- 2 Green Onion sliced
Sauce
- 3 tbsp Light Soy Sauce
- 2 tbsp Rice Vinegar
- 1 tbsp Black Vinegar
- 2 tsp Chili Oil more or less to taste
- 1/2 tsp Sesame Oil
- 2 tsp Granulated Sugar
- 2 cloves Garlic minced
- 1 tsp Toasted Sesame Seeds
- 1/4 tsp Sichuan Peppercorn Powder optional
- 1/4 tsp MSG optional
Recipe Instructions
- Cook the noodles. I punctured a few holes in each bag and cooked in the microwave for 1 minute. You can also cook in boiling water on the stove until cooked through.
- Place the cooked noodles in a colander and rinse under cold water.
- Combine all sauce ingredients in a large bowl. Add the rinsed cooked noodles, thinly sliced cucumber, and green onions. Toss together well.
