Cook the noodles. I punctured a few holes in each bag and cooked in the microwave for 1 minute. You can also cook in boiling water on the stove until cooked through.
Place the cooked noodles in a colander and rinse under cold water.
Combine all sauce ingredients in a large bowl. Add the rinsed cooked noodles, thinly sliced cucumber, and green onions. Toss together well.
