One Pan 5 Ingredient Pesto Orzo w/ Chicken Sausage
Equipment
Ingredients
- 1 tablespoon Extra Virgin Olive Oil
- 12 oz Chicken Sausage, I used Tomato Basil Mozzarella flavored chicken sausage
- 1.5 cups Orzo Pasta, uncooked
- 3 cups Chicken Broth, more as needed
- 3 oz Arugula
- 1/2 cup Basil Pesto, I used the pesto from Costco; can use homemade
- Fresh Basil, optional to serve
- Parmesan Cheese, optional to serve
Instructions
- Cut chicken sausage into 1/2 inch rounds and cut the rounds in half
- Heat olive oil in a large high-rimmed sauté pan over medium heat. Add chicken sausage and cook for 3 minutes until they start to get browned. Add uncooked orzo and toast for another 2 minutes.
- Pour in chicken broth and bring to a boil. Turn down to a simmer and cook, stirring occasionally, until the orzo is cooked through and most of the liquid is absorbed or about 10-15 minutes. Add more broth as needed.
- Once the orzo is cooked and most of the liquid is absorbed, add arugula. Stir to combine and wilt the arugula. Add the pesto and stir to combine.
- Serve immediately. Optionally top with fresh basil and parmesan cheese.

Big flavor. Low effort. Love
Delicious and so easy!!! We used chicken breast cutlets instead of sausage, and it was still delicious. We also used a spinach/arugula blend instead of only arugula. The leftovers are delicious too. Will definitely be making this again.
Thank you so much for leaving this nice review! It sounds like chicken would be delicious and I’m always a fan of a spinach/arugula blend!
