One Pan 5 Ingredient Pesto Orzo w/ Chicken Sausage

A quick and flavorful meal that is perfect to throw together when you don't want to spend a lot of time cooking!

Ingredients 

Instructions 

  • Cut chicken sausage into 1/2 inch rounds and cut the rounds in half
  • Heat olive oil in a large high-rimmed sauté pan over medium heat. Add chicken sausage and cook for 3 minutes until they start to get browned. Add uncooked orzo and toast for another 2 minutes.
  • Pour in chicken broth and bring to a boil. Turn down to a simmer and cook, stirring occasionally, until the orzo is cooked through and most of the liquid is absorbed or about 10-15 minutes. Add more broth as needed.
  • Once the orzo is cooked and most of the liquid is absorbed, add arugula. Stir to combine and wilt the arugula. Add the pesto and stir to combine.
  • Serve immediately. Optionally top with fresh basil and parmesan cheese.

    Delicious and so easy!!! We used chicken breast cutlets instead of sausage, and it was still delicious. We also used a spinach/arugula blend instead of only arugula. The leftovers are delicious too. Will definitely be making this again.
