Chive and Onion Crispy Parmesan Potatoes
My take on the social media viral crispy parmesan potatoes! These are an amazingly crispy and flavorful side dish.
Servings: 4
Ingredients
- 2 lbs Yellow Potatoes scrubbed and rinsed
- 4 tablespoon Butter melted; I used Kerrygold Chive & Onion Butter Blend
- 3/4 cup Parmesan Cheese grated; divided
- 1 teaspoon Garlic Powder
- 1 teaspoon Olive Oil
- Kosher Salt & Black Pepper to taste
- 2 tablespoon Fresh Chives thinly sliced; to serve
Instructions
- Preheat oven to 400 degrees F.
- Cut yellow potatoes into bite-size pieces (about 1 inch)
- Pour melted butter into the high-rimmed baking pan. Sprinkle 1/2 a cup of grated parmesan cheese and the garlic powder on top. Stir to combine into a paste and spread evenly across the baking pan.
- Place cut potatoes on top of the butter and parmesan paste, flat-side down.
- Drizzle the tops of the potatoes with olive oil, season with salt & pepper, and sprinkle the remaining 1/4 cup of grated parmesan on top.
- Bake for about 30 minutes or until the potatoes are cooked through and the parmesan is very crispy, but not burnt.
- Sprinkle with chives and serve.
