Cucumber Salad
Combine all cucumber salad ingredients in a bowl. Taste and adjust any ingredients as desired.
6 oz Persian Cucumbers, 1/4 cup Red Onion, 1 tablespoon Lemon Juice, 1 teaspoon Extra Virgin Olive Oil, Kosher Salt & Black Pepper

Cook couscous according to package instructions. I used a box of Near East Basil & Herb Pearled Couscous mix.
5 oz Pearl Couscous
Toss spinach & arugula mix with 1 tbsp lemon juice and 2 tsp extra virgin olive oil.
2 oz Spinach Arugula Mix, 1 tablespoon Lemon Juice, 2 teaspoon Extra Virgin Olive Oil
Assemble. Evenly divide the dressed spinach & arugula among serving bowls. Evenly spoon the cooked pearl couscous on top of the greens. Evenly divide the tomato salad, cucumber salad, feta, and pesto hummus between the bowls.
6 tablespoon Feta , 6 tablespoon Pesto Hummus

Serving Suggestions: Serve with pita chips or pita bread. Optionally add the protein of your choice such as grilled chicken or frozen beef kebabs from Trader Joe's.
