Hummus Bowl with Pearl Couscous and Vegetables

This Hummus Bowl with Pearl Couscous and Vegetables is loaded with fresh and flavorful ingredients. I used Pesto Hummus so I drew inspiration from a Caprese salad and made a tomato salad with balsamic and basil. I also served with feta cheese crumbles in place of the more traditional mozzarella cheese in a Caprese salad.

This bowl is loaded with a variety of tasty components. You can also add a protein like chicken or beef kebabs if you want to make your bowl heartier! I highly suggest serving with some pita chips or pita bread to scoop up all of those delicious flavors.

Hummus Bowl with Pearl Couscous Ingredients

Tomato Salad

Cucumber Salad

  • 6 oz Persian or English Cucumber cut into 1/4 inch slices
  • 1/4 cup Red Onion thinly sliced crosswise; or about 1/4 of a medium sized red onion
  • 1 tbsp Lemon Juice more to taste
  • 1 tsp Extra Virgin Olive Oil
  • Salt & Black Pepper to taste

Tomato Salad

  1. Combine all tomato salad ingredients in a bowl. Taste and adjust any ingredients as desired.

Cucumber Salad

  1. Combine all cucumber salad ingredients in a bowl. Taste and adjust any ingredients as desired.

Other

  1. Cook couscous according to package instructions. I used a box of Near East Basil & Herb Pearled Couscous mix.
  2. Toss spinach & arugula mix with 1 tbsp lemon juice and 2 tsp extra virgin olive oil.
  3. Assemble. Evenly divide the dressed spinach & arugula among serving bowls. Evenly spoon the cooked pearl couscous on top of the greens. Evenly divide the tomato salad, cucumber salad, feta, and pesto hummus between the bowls.]

Ingredients 

Tomato Salad

Cucumber Salad

  • 6 oz Persian Cucumbers, or English Cucumber
  • 1/4 cup Red Onion, thinly sliced crosswise; or about 1/4 of a medium sized red onion
  • 1 tablespoon Lemon Juice, more to taste
  • 1 teaspoon Extra Virgin Olive Oil
  • Kosher Salt & Black Pepper, to taste

    6 oz Grape Tomatoes, 1 clove Garlic, 1 tablespoon Fresh Basil, 1 tablespoon Extra Virgin Olive Oil, 2 teaspoon Balsamic Vinegar, Kosher Salt & Black Pepper

Cucumber Salad

  • Combine all cucumber salad ingredients in a bowl. Taste and adjust any ingredients as desired.
    6 oz Persian Cucumbers, 1/4 cup Red Onion, 1 tablespoon Lemon Juice, 1 teaspoon Extra Virgin Olive Oil, Kosher Salt & Black Pepper

    5 oz Pearl Couscous
  • Toss spinach & arugula mix with 1 tbsp lemon juice and 2 tsp extra virgin olive oil.
    2 oz Spinach Arugula Mix, 1 tablespoon Lemon Juice, 2 teaspoon Extra Virgin Olive Oil
  • Assemble. Evenly divide the dressed spinach & arugula among serving bowls. Evenly spoon the cooked pearl couscous on top of the greens. Evenly divide the tomato salad, cucumber salad, feta, and pesto hummus between the bowls.
    6 tablespoon Feta, 6 tablespoon Pesto Hummus

Notes

Serving Suggestions: Serve with pita chips or pita bread. Optionally add the protein of your choice such as grilled chicken or frozen beef kebabs from Trader Joe's.
