This Loaded Baked Potato Dip is a creamy, indulgent appetizer made with crispy bacon, cheddar cheese, sour cream, cream cheese, and chives, inspired by a loaded baked potato in dip form. Perfect for your next gathering, scoop it up with your favorite ridged chips and enjoy!
Preheat the oven to 415°F. Line a baking sheet with foil or parchment paper and place the bacon strips on it. Bake for 15-25 minutes, or until very crispy. Cooking time will vary depending on the thickness of the bacon. Let cool, then pat with a paper towel to remove excess grease. Chop into small bits, reserving some for topping.
In a mixing bowl, combine the sour cream and softened cream cheese until smooth. Stir in the cheddar cheese, garlic powder, onion powder, kosher salt, and black pepper until well incorporated.
Fold in the chopped chives and bacon bits, saving some of each for garnish.
Cover and refrigerate for at least 2 hours or overnight to let the flavors meld. Serve at room temperature. Top the dip with the reserved bacon and chives. Serve with ridged chips in your favorite flavor, such as plain, sour cream & cheddar, or sour cream & onion.
