Baked Boursin and Butternut Squash Pasta

This recipe for Baked Boursin and Butternut Squash Pasta is inspired by the the "viral feta pasta", also known as "TikTok feta pasta" or "baked feta pasta," which went viral on social media back in 2021. This dish involved baking a block of feta cheese with cherry tomatoes, olive oil, and seasonings before mixing it with pasta.
In 2022, I created my own twist on this viral dish by swapping out the feta cheese for Boursin cheese in this tasty recipe!

And now I am creating a fall version of my Boursin cheese version which involves swapping out the tomatoes for cubed butternut squash. Plus I included some optional roasted garlic and fresh rosemary for extra fall flavors! This recipe only requires 3 ingredients (if you don't count the EVOO, salt, and pepper) but doesn't sacrifice any flavor. Keep reading to learn how to make this simple fall recipe!

What pasta shape did I use?
I tried out a pasta shape I have never used before called Trottole! It's a spiraled pasta shape that resembles a spinning top. This pasta has a short, wide, and tightly wound corkscrew appearance, with a thicker, denser body that holds onto sauces well - perfect for this creamy Boursin and Butternut Squash sauce!
Recipe Notes
- I used 1 medium butternut squash. I cut the squash into 1 inch or so cubes. This created about 3 cups of butternut squash. See the photos below for reference. Alternatively, you could use a 16 oz container of pre-cut butternut squash.
- If you choose to use pre-cut butternut squash, the prep time of this recipe is almost zero minutes! Most of the prep time was the time it took to peel and chop the squash.
- I used the Garlic & Herbs Boursin Cheese in this recipe. You can use whatever flavor you prefer. That being said, I think the Garlic & Herbs flavor works best with the butternut squash and is the easiest flavor to find in the store.
- The garlic and fresh rosemary are listed as optional ingredients. The Boursin cheese has plenty of flavor so these ingredients aren't absolutely necessary, but I enjoyed the extra pop of flavor from the roasted garlic and fresh rosemary!
What ingredients do I need to make this Baked Boursin and Butternut Squash Pasta?
- 1 medium Butternut Squash, cut into 1 inch cubes; or use a 16 oz package of pre-cut butternut squash
- 1/4 cup Extra Virgin Olive Oil
- 3/4 tsp Kosher Salt, or to taste
- 1/2 tsp Black Pepper, or to taste
- 1 package Garlic & Herbs Boursin Cheese
- 4 cloves Garlic, unpeeled; optional
- 3 sprigs Fresh Rosemary, optional
- 16 oz Pasta
- 2 cups Pasta Water, reserve the pasta cooking water
How do I make this Baked Boursin and Butternut Squash Pasta?






- Preheat the oven to 400 degrees F.
- Add the cubed butternut squash to a 9x13 inch baking dish. Toss with extra virgin olive oil, kosher salt, and black pepper. Optionally, scatter in the unpeeled garlic cloves and the leaves from a few sprigs of fresh rosemary if using.
- Place the block of Boursin cheese in the center of the baking dish. Bake in the oven for about 40 minutes or until the squash is tender.
- Meanwhile, cook the pasta to al dente according to package instructions. Make sure to reserve about 2 cups of pasta cooking water before draining the pasta. Toss the pasta with a drizzle of extra virgin olive oil to prevent sticking.
- Remove the baking dish from the oven. Add the roasted butternut squash and Boursin cheese to a blender or food processor. If using garlic, squeeze the roasted garlic out of the peel using a fork and add to the blender.
- Blend until smooth. The mixture will be quite thick. Add some of the reserved pasta water, about 1/4 cup at a time, and continue to blend until the sauce is your desired consistency. I ended up using about 1 cup of the pasta water.
- Pour the blended sauce back into the baking dish. Mix in the cooked pasta. Toss until well combined. Add additional splashes of pasta water to mix everything together well and thin out the sauce as needed. Season to taste with additional salt and pepper then serve.
