One Pot Pasta with Chicken, Spinach, Mushrooms, and TomatoOne Pot Pasta with Chicken, Spinach, Mushrooms, and Tomato
Equipment
- Dutch Oven I love using my Le Creuset Dutch Oven for this recipe!
Ingredients
- 1 lb Chicken Breast Boneless Skinless, Cubed
- Salt and Pepper To Taste
- 2 tbsp Extra Virgin Olive Oil Divided into two halves
- 1 Shallot Diced
- 4 cloves Garlic Minced
- 1 cup Baby Bella Mushrooms Sliced
- 1 cup Tomatoes Halved, Quartered, or Chopped depending on size
- 1/2 tsp Italian Seasoning
- 1/2 tsp Paprika
- 1/2 tsp Garlic Powder
- 1/4 tsp Red Pepper Flakes Add more or less depending on heat preference
- 2 cups Chicken Broth
- 1/2 cup Heavy Cream
- 8 oz Pasta Short Shape like Bowties
- 3 oz Baby Spinach
- 1/2 cup Mozzarella Cheese Shredded
- 1/8 cup Parmesan Cheese Grated, to serve
Instructions
- Season cubed chicken breast with salt and pepper.
- Heat 1 tbsp of olive oil over medium high heat in a dutch oven or large pot. Add chicken to dutch oven and cook for about 8 minutes or until cooked through. Remove onto plate.
- Heat the other tbsp of olive oil and add shallot and garlic and cook for 2 minutes.
- Add mushrooms, tomatoes, Italian seasoning, paprika, garlic powder, red pepper flakes, and salt and pepper to taste. Stir and cook for a few minutes.
- Add chicken broth and heavy cream and let it get to a boil. Once boiling, add uncooked pasta and cook until pasta is al dente.
- Add back cubed chicken, spinach, and shredded cheese.
- Serve immediately with grated parmesan cheese.
