This easy one pot pasta is a cozy, flavor-packed dinner made with tender chicken, sautéed mushrooms, juicy tomatoes, and fresh spinach all simmered in a creamy broth. Everything cooks together in one pot for minimal cleanup and maximum flavor. It’s the perfect weeknight meal when you want something hearty and satisfying but don’t feel like doing dishes.

One Pot Pasta with Chicken, Spinach, Mushrooms, and Tomato
Equipment
- Dutch Oven I love using my Le Creuset Dutch Oven for this recipe!
Ingredients
- 1 lb Boneless Skinless Chicken Breasts, cubed
- Kosher Salt & Black Pepper, to taste
- 2 tablespoon Extra Virgin Olive Oil, divided
- 1 Shallot, diced
- 4 cloves Garlic, minced
- 1 cup Baby Bella Mushrooms, sliced
- 1 cup Roma Tomato, halved, quartered, or chopped depending on size
- 1/2 teaspoon Italian Seasoning
- 1/2 teaspoon Paprika
- 1/2 teaspoon Garlic Powder
- 1/4 teaspoon Red Pepper Flakes, more or less depending on heat preference
- 2 cups Chicken Broth
- 1/2 cup Heavy Cream
- 8 oz Pasta, Use a short-cut shape such as bowties
- 3 oz Baby Spinach
- 1/2 cup Low Moisture Mozzarella Cheese, shredded
- 1/8 cup Parmesan Cheese, freshly grated to serve
Instructions
- Season cubed chicken breast with salt and pepper. Heat 1 tablespoon of olive oil in a large Dutch oven or pot over medium-high heat. Add the chicken and cook for about 8 minutes, or until fully cooked. Transfer to a plate and set aside.
- Add the remaining tablespoon of olive oil to the pot. Sauté the shallot and garlic for 2 minutes until fragrant. Stir in the mushrooms, cherry tomatoes, Italian seasoning, paprika, garlic powder, red pepper flakes, and more salt and pepper to taste. Cook for another 3 to 4 minutes until the vegetables begin to soften.
- Pour in the chicken broth and heavy cream. Bring to a boil, then add the uncooked pasta. Stir well and cook until the pasta is al dente, stirring occasionally to prevent sticking.
- Reduce the heat and stir in the cooked chicken, spinach, and shredded cheese until the spinach wilts and the cheese melts. Taste and adjust seasoning if needed.
- Serve immediately with freshly grated parmesan cheese on top.
