Equipment

Ingredients

Instructions

  • Season cubed chicken breast with salt and pepper. Heat 1 tablespoon of olive oil in a large Dutch oven or pot over medium-high heat. Add the chicken and cook for about 8 minutes, or until fully cooked. Transfer to a plate and set aside.
  • Add the remaining tablespoon of olive oil to the pot. Sauté the shallot and garlic for 2 minutes until fragrant. Stir in the mushrooms, cherry tomatoes, Italian seasoning, paprika, garlic powder, red pepper flakes, and more salt and pepper to taste. Cook for another 3 to 4 minutes until the vegetables begin to soften.
  • Pour in the chicken broth and heavy cream. Bring to a boil, then add the uncooked pasta. Stir well and cook until the pasta is al dente, stirring occasionally to prevent sticking.
  • Reduce the heat and stir in the cooked chicken, spinach, and shredded cheese until the spinach wilts and the cheese melts. Taste and adjust seasoning if needed.
  • Serve immediately with freshly grated parmesan cheese on top.
