One Pan Pesto, Corn, and Chicken Sausage Orzo

A delicious and summery one pan orzo dish that comes together quickly with minimal ingredients!

Ingredients 

Instructions 

  • Heat oil in a large high-rimmed sauté pan over medium heat. Add sliced chicken sausage and cook for 5 minutes, stirring occasionally. Add red pepper flakes and orzo, stir to combine, and toast for 2 minutes.
  • Pour in chicken broth, garlic powder, and black pepper. Bring to a boil then lower the heat to simmer. Stir often so the orzo doesn't stick to the bottom of the pan. Add more chicken broth as needed. Cook until most of the liquid is absorbed and the orzo is cooked through, about 10-15 minutes.
  • When the orzo is nearly cooked, add the corn and basil pesto. Stir to combine. Serve immediately with parmesan cheese.

    I only had italian sausage and sun dried tomato pesto on hand, but I followed the directions otherwise and it is sooo good! I’m so glad I tried it. I never thought to add corn with sausage but it tastes great
