One Pot Leek and Mushroom Pasta

A delicious leek and mushroom pasta recipe that all cooks in one pan. This dish feels fancy, but is easy to throw together and customize with ingredients you have on hand.

I used a couple Trader Joe’s seasoning blends. If you don’t have a Trader Joe’s, you can combine some other seasonings to create similar flavors. See below for the ingredients in the Trader Joe’s seasoning blends.

Trader Joe’s Mushroom & Company Umami Seasoning Blend

  • KOSHER SALT
  • DRIED ONIONS
  • GROUND MUSTARD SEED
  • PORCINI MUSHROOM POWDER
  • WHITE BUTTON MUSHROOM POWDER
  • CRUSHED RED PEPPER
  • BLACK PEPPER
  • DRIED THYME

Everything but the Leftover’s Seasoning Blend

  • DEHYDRATED ONION
  • SEA SALT
  • YEAST EXTRACT
  • SALT
  • GROUND BLACK PEPPER
  • DRIED YEAST
  • TURMERIC POWDER
  • NATURAL FLAVOR
  • DRIED CELERY SEED
  • CITRIC ACID (ACIDULANT)
  • GROUND SAGE
  • ROSEMARY POWDER
  • DRIED THYME
  • DRIED PARSLEY

One Pot Leek and Mushroom Pasta

A delicious leek and mushroom pasta recipe that all cooks in one pan. This dish feels fancy, but is easy to throw together and customize with ingredients you have on hand.

Ingredients 

  • 1 tablespoon Extra Virgin Olive Oil
  • 4 oz Baby Bella Mushrooms, sliced
  • 1 Leek, trimmed and thinly sliced (white and light green parts only)
  • 3 cloves Garlic, minced
  • Kosher Salt & Black Pepper, to taste
  • 1 tablespoon Balsamic Vinegar
  • 1/2 teaspoon Umami Seasoning, I bought this at Trader Joe's
  • 1/2 teaspoon Everything but the Leftover's Seasoning Blend, I bought this at Trader Joe's
  • 8 oz Pasta, I used shells, can use another small pasta shape
  • 3 cups Chicken Broth, add additional broth or water as needed
  • 1/2 Lemon, juice & zest
  • 3 sprigs Fresh Thyme, remove the leaves from the stems
  • 2 oz Brie, I used Trader Joe's Brie with Wild Mushrooms
  • 1 tablespoon Butter
  • Parmesan Cheese, Red Pepper Flakes, Salt & Pepper, Lemon Juice , optional to serve

Instructions 

  • Heat olive oil in a Dutch Oven or large pot over medium heat. Add the mushrooms and leeks. Season with a pinch of salt. Cook for 7 minutes, stirring occasionally. Add garlic and cook another minute.
  • Pour in balsamic vinegar and stir to deglaze the pan. Add the Umami seasoning blend and Everything but the Leftover's seasoning blend. If you don't have a Trader Joe's, substitue with the seasonings of your choice. Cook for 2 minutes.
  • Add the uncooked pasta and broth/water. Stir to combine and season to taste with salt and pepper. Bring to a boil and cook for 15 minutes or until the pasta is al dente and most of the liquid is absorbed. Add more broth/water throughout the cooking process as needed. Stir every few minutes so the pasta doesn't stick to the bottom of the pan.
  • Once the pasta is al dente, sqeeze in the lemon juice. Add the lemon zest, fresh thyme leaves, brie, and butter. Stir to combine until melted.
  • Serve immediatly with toppings such as red pepper flakes, parmesan cheese, additional lemon juice, and salt & pepper.
