Spicy Shrimp Burst Tomato Pasta

This Spicy Shrimp Burst Tomato Pasta is not only a beautiful dish, but also so delicious! Get ready to twirl your fork around a delightful combination of tender angel hair pasta mixed with lots of seasoned shrimp and sweet bursted tomatoes. This dish is perfect for summer because of all the fresh notes from lemon juice, white wine, and parsley. Shrimp Burst Tomato Pasta Ingredients
Shrimp
- 1/2 lb Shrimp peeled and deveined - my favorite are the frozen Red Argentinian shrimp from Trader Joe's
- 1 tsp Smoked Paprika - you could also use regular paprika instead
- 1/4 tsp Cayenne - cayenne can be spicy, so adjust for your spice preference
- 1/2 tsp Salt
- 1 tbsp Olive Oil
Other Ingredients
- 16 oz Cherry Tomatoes or grape tomatoes
- 1/2 tsp Red Pepper Flakes - adjust for your spice preference
- Salt and Pepper to taste
- 3 cloves Garlic minced
- 1/4 cup White Wine - I like using a dry white wine such as Sauvignon Blanc or Pinot Grigio. You don’t need anything fancy, but I like using a wine that I would actually drink!
- 1/4 cup Fresh Parsley chopped
- 1 tbsp Lemon Juice - about half a lemon or so. you can use the rest to squeeze on top when serving
- 8 oz Angel Hair Pasta or use spaghetti, linguine, etc; reserve 1/2 cup of pasta water
- Parmesan Cheese, Flakey Salt - optional to serve
Recipe Instructions
Shrimp instructions
First, let's season the shrimp. In a bowl, combine the peeled and deveined shrimp with smoked paprika, cayenne, and salt. Give it a good toss until the shrimp is evenly coated with the spices.
Next, heat up some olive oil in a large pan over medium-high heat. Cook the seasoned shrimp for a few minutes on each side until they are cooked through. Once cooked, transfer them to a plate and set them aside.
Tomato Instructions
Now, in the same pan, add a bit more olive oil if needed. Reduce the heat to medium and toss in the cherry tomatoes. Sprinkle them with red pepper flakes and a pinch of salt. Give it a gentle stir to coat the tomatoes, then cover the pan with a lid. Let the tomatoes cook for about 10 minutes until they start to burst. If needed, you can press them down with a wooden spoon to help them burst more easily.
Remaining Instructions
While the tomatoes are cooking, prepare the pasta according to the package instructions. Remember to reserve about 1/2 cup of pasta water before draining.
Once the tomatoes have burst, add the minced garlic to the pan and give it a stir. Pour in the dry white wine and let it simmer for 2-3 minutes to allow the flavors to meld together. Then, add the fresh parsley, lemon juice, and the cooked shrimp to the pan. Give everything a good stir to combine.
Now, transfer the cooked pasta to the pan with the tomato and shrimp mixture. Add a splash of pasta water as needed to create a delicious, silky sauce that coats the pasta perfectly. Toss everything together until all the flavors are well combined.
Divide the Spicy Shrimp Burst Tomato Pasta among bowls, and if you desire, sprinkle some Parmesan cheese, an extra squeeze of lemon juice, and a pinch of flakey salt on top for an added burst of flavor.

- 1/2 teaspoon Kosher Salt
- 1 tablespoon Extra Virgin Olive Oil
Other Ingredients
- 16 oz Cherry Tomatoes, or grape tomatoes
- 1/2 teaspoon Red Pepper Flakes, more or less to taste
- Kosher Salt & Black Pepper, to taste
- 3 cloves Garlic, minced
- 1/4 cup White Wine, dry
- 1/4 cup Fresh Parsley, chopped
- 1 tablespoon Lemon Juice, additional to serve
- 8 oz Angel Hair Pasta, or other long shape; reserve 1/2 cup of pasta water
- Parmesan Cheese, Flaky Salt, optional to serve
Instructions
Shrimp
- Season shrimp with smoked paprika, cayenne, and salt. Toss to evenly combine.
- Heat the olive oil over medium high heat in a large pan. Cook for a few minutes a side and remove to a plate.
Other Instructions
- In the same pan, over medium heat, add another drizzle of olive oil if needed. Add the cherry tomatoes and season with red pepper flakes and a big pinch of salt. Stir to combine then cover with a lid. Cook for about 10 minutes or until the tomatoes are bursting. You can press them down with a wooden spoon to help them burst if needed.
- Meanwhile, cook the pasta according to package instructions. Make sure to reserve about 1/2 a cup of pasta water.
- Once the tomatoes have burst, add the minced garlic. Stir to combine. Pour in the white wine and simmer for 2-3 minutes.
- Add the fresh parsley, lemon juice, and the cooked shrimp. Stir to combine. Transfer over the cooked pasta and splash in pasta water as needed. Toss until everything is well combined.
- Divide among bowls. Optionally serve with parmesan cheese, additional lemon juice, and flakey salt.

This was the most amazing recipe!! Restaurant quality. I had a bit of goat cheese that I needed to use up and it added just a bit of creaminess. Definitely on the top of my list to make again!
