Easy Veggie Orzo Soup

This soup is SO easy to make. This soup can be easily modified to your liking/what ingredients you have on hand. Feel free to add additional veggies or swap the ones I used for what you have! For example, spinach would work great instead of kale. You could also switch the orzo for rice for a gluten free version.

This recipe is completely vegetarian as well if you use vegetable broth!

Most of the time spent on this recipe is letting the soup simmer. This is a hands off process so you can start doing some dishes or knock out another quick task while dinner cooks.

Veggie Orzo Soup

This soup uses pantry ingredients and is quick and easy to make!

Ingredients 

Instructions 

  • Heat olive oil over medium heat in Dutch oven. Add onion and cook for 5 minutes until softened and fragrant.
  • Add carrots, celery, and garlic and cook for 3-4 more minutes. Stir in red pepper flakes, salt and pepper, and Italian seasoning.
  • Stir in chicken broth. Add the bay leaf and orzo. Reduce heat to low and simmer for about 20-25 minutes until the orzo is cooked through.
  • Remove bay leaf. Add the juice of one lemon. Add baby kale and stir until wilted.

    Great way to use up leftover veggies! My lemon was super juicy, so I only used half. Otherwise, followed recipe exactly. Thank you!

    I served this recipe to my guests and they enjoyed it however I only added a little bit of crushed peppers and a little Italian Seasoning. If I would have added what the recipe calls for, we wouldn’t have been able to enjoy it.
