Tortellini alla Vodka Soup

I LOVE vodka pasta. It’s easily my favorite thing to cook and eat. As I was brainstorming recipes for this soup series, I immediately thought of vodka sauce given that it’s my favorite. I quickly realized I had never seen a vodka sauce soup recipe so that was a definitely a sign that I needed to create one!

If you also love pasta with vodka sauce then this soup is for you! The broth is a creamy vodka sauce with Italian sausage and cheesy tortellini. I used sweet Italian Sausage and added red pepper flakes and calabrian chili paste to give this soup a nice level of heat. You can also use hot Italian Sausage and adjust the other spicy elements accordingly. Feel free to leave out the Italian Sausage and use vegetable broth for a vegetarian version. This would also be delicious with some spinach or kale mixed in at the end. The customizations are endless for this yummy soup.

Tortellini alla Vodka Soup

If you love pasta with vodka sauce then this soup is for you! The broth is a creamy vodka sauce with italian sausage and cheesy tortellini.

Ingredients 

Instructions 

  • Heat olive oil in a Dutch oven or large pot over medium heat. Add the italian sausage and break it up into small pieces with a spoon. Cook for 3 minutes then add the diced onion. Cook for 4 minutes, until the onions are softened. Add the minced garlic and cook another minute.
  • Optionally add red pepper flakes and season to taste with salt and pepper.
  • Add the calabrian chili paste and tomato paste. Stir to combine and cook for 5 minutes until darkened in color. Pour in the vodka to deglaze the pot. Scrape any stuck bits on the bottom of the pan with a wooden spoon. Let the vodka cook off for a couple minutes.
  • Pour in the crushed tomatoes and chicken broth. Bring to a boil then simmer for 10 minutes.
  • Add the tortellini and simmer another few minutes until they are cooked through. Finally, pour in the heavy cream and stir to combine.
  • Divide into bowls and serve with fresh basil and grated parmesan cheese.
