This Chipotle Copycat Fresh Tomato Salsa Recipe (aka their Mild Salsa) is a spot-on recreation of the restaurant favorite!   • Roma Tomatoes: I prefer Roma tomatoes for this salsa. They’re firm, flavorful, and less watery than other varieties. They also have fewer seeds than some tomatoes.
  • Jalapeño: I used 1/2 of a small pepper for this recipe and removed most of the seeds. If you don't enjoy a lot of spice, you can use even less jalapeño and remove all of the seeds. If you want more spice, leave the seeds.

Chipotle Copycat Fresh Tomato Salsa Recipe (Mild Salsa)

Ingredients 

  • 1 pound Roma Tomato, about 4 tomatoes; cut into 1/4 inch pieces
  • ¾ cup Fresh Cilantro, roughly chopped
  • 1 tablespoon Jalapeño, stemmed, seeded, and finely diced (leave some seeds if you like it spicier)
  • ½ cup Red Onion, finely diced
  • 1 tablespoon Lime Juice, adjust to taste
  • 1 teaspoon Kosher Salt, adjust to taste

Instructions 

  • Add all ingredients to a medium bowl and mix until well combined. Taste and adjust with more lime juice or kosher salt, if needed.
  • For the best flavor, let the salsa sit at room temperature for 30–60 minutes before serving to allow the flavors to meld. You can also make it ahead and store it covered in the fridge for up to 3 days. If chilled, let it sit at room temperature for about 15 minutes before serving for the best texture and taste. Make sure to taste again and add more lime juice or kosher salt if needed.
