This Chipotle Corn Salsa Copycat Recipe tastes just like the fresh, zesty salsa you know and love from the restaurant. And there's NO cooking required for this recipe. Just chop a few ingredients, toss in a bowl, and you're ready to top your burrito bowls, tacos, or enjoy as a dip with chips!

  • Frozen Corn: Use frozen or fresh corn. Thaw frozen corn completely before mixing. You can do this easily by rinsing under cold water in a mesh strainer. I used fire-roasted frozen corn, but Chipotle uses plain white sweet corn. If corn is in season, fresh corn is a delicious option. You can serve it raw or grill it if you prefer.
  • Jalapeño: I used 1 small pepper for this recipe and removed most of the seeds. If you don't enjoy a lot of spice, you can use even less jalapeño and remove all of the seeds. If you want more spice, leave the seeds.

  • Let it rest. The salsa tastes best after sitting for 30–60 minutes at room temperature. This gives the flavors time to meld.
  • Taste and adjust before serving. Prefer extra tang? Squeeze in more lime juice. Adjust the salt to your liking.
  • Storage: Store in an airtight container in the fridge for up to 4-5 days. Stir well before serving, as the juices may settle. Let it sit at room temperature for about 15 minutes before serving for the best texture and taste.

Chipotle Copycat Corn Salsa Recipe (No Cook)

Ingredients 

  • 16 ounces Frozen Corn, or fresh corn (if using frozen, rinse under cold water to thaw)
  • ½ cup Fresh Cilantro, roughly chopped
  • ½ cup Red Onion, finely diced
  • 2 tablespoons Jalapeño, stemmed, seeded, and finely diced (leave some seeds if you like it spicier)
  • 3 tablespoons Lime Juice, or about 1 to 2 limes (adjust to taste)
  • 1 ½ teaspoons Kosher Salt, or to taste

Instructions 

  • Add all ingredients to a medium bowl and mix until well combined. Taste and adjust with more lime juice or kosher salt, if needed.
  • For the best flavor, let the salsa sit at room temperature for 30–60 minutes before serving to allow the flavors to meld. You can also make it ahead and store it covered in the fridge for up to 4–5 days. If chilled, let it sit at room temperature for about 15 minutes before serving for the best texture and taste.
