Chili oil is made by infusing oil with various ingredients. Chili oil can range from mild to extremely spicy, depending on the type and quantity of chili peppers used. It is often found in stores in jars or bottles, but it’s actually really easy to make at home!

I made a simple chili oil for this recipe with just Avocado Oil and Sichuan Peppercorns. The key is to get the oil nice and hot before pouring over your aromatics. You want the oil to start smoking, but not burn. This is essential to get that satisfying sizzle when you pour it over your aromatics.

I also used Five Spice Powder in this recipe. This spice blend typically includes a combination of five aromatic spices: star anise, cloves, cinnamon, Sichuan peppercorns, and fennel seeds. The blend is used to add a complex and balanced flavor to a wide range of dishes, including stir-fries, marinades, and braises. The star anise and cinnamon provide sweetness, the cloves add a warm and pungent flavor, the Sichuan peppercorns contribute a citrusy and numbing sensation, and the fennel seeds offer a mild licorice flavor. Chili Oil

  • 1/4 cup Avocado Oil – or another high-smoke point neutral oil
  • 2 tbsp Sichuan Peppercorns – use more or less based on spice preference. These will add a spicy flavor, but you’ll strain out the actual peppercorns using a Mesh Strainer

  • 1 tbsp Light Soy Sauce
  • 1 tsp Dark Soy Sauce
  • 1 tbsp Black Vinegar – can also use rice vinegar
  • 1 tsp Sesame Oil – optional; I used Trader Joe’s Sesame Chili Oil for additional heat
  • 8 oz Fresh Wheat Noodles – I used refrigerated noodles from the international grocery store. Feel free to use any noodles you like or even spaghetti.

Optional Toppings

  • Egg – I added a fried egg to each serving
  • Green Onion – sliced; dark green top portion
  • Cucumber – cut into thin slices

Recipe Instructions

Chili Oil

  • Heat oil and Sichuan peppercorns in a small saucepan over medium-high. Heat for 5-10 minutes or until the oil begins to smoke. Keep an eye on the oil so it doesn’t burn.

Ingredients Before Chili Oil

  • While the chili oil heats, add the bottom parts of the green onions, minced garlic, five spice powder, sesame seeds, and brown sugar to a bowl. Mix together.
  • Once the oil begins to smoke, immediately pour it into the bowl of pre-mixed ingredients. Use a mesh strainer so the Sichuan peppercorns don’t go into the bowl. The ingredients should sizzle and cook from the heat of the oil.

Ingredients After Chili Oil

  • Meanwhile, cook noodles according to package instructions. Strain and divide into 2 bowls for serving.
  • To the chili oil bowl, add the light soy sauce, dark soy sauce, vinegar, and optional sesame oil. Stir to combine.
  • Spoon the mixture over the cooked noodles.
  • Add desired toppings such as fried eggs, the sliced top portion of the green onions, and sliced cucumbers.
