Spicy Calabrian Chili Pasta

This Spicy Calabrian Chili Pasta has a good portion of heat from the Calabrian chili paste, but is mellowed out perfectly with the cream. This pasta dish is super easy to throw together, but will taste like you spent hours in the kitchen!

I love using the Italian Bomba sauce from Trader Joe’s, but you can also find Calabrian Chili Paste in the Italian or International section of your grocery store.

Spicy Calabrian Chili Pasta

This pasta has a good amount of spice, but it combines beautifully with the cream. This is an easy dinner to throw together any night of the week, but feels fancy!

Ingredients 

  • 2 teaspoon Extra Virgin Olive Oil
  • 1 Shallot, thinly sliced
  • 4 cloves Garlic, minced
  • 1 tablespoon Calabrian Chili Paste, I used the Italian Bomba sauce from Trader Joe's
  • 3 tablespoon Tomato Paste
  • 1/4 cup White Wine, dry such as Pinot Grigio or Sauvigon Blanc
  • 1/4 cup Heavy Cream
  • Kosher Salt & Black Pepper, to taste
  • 1/2 cup Pasta Water, add 1/4 cup and combine and add more if needed to thin out sauce
  • 1/8 cup Parmesan cheese, freshly grated; more to serve
  • 6 oz Pasta, I used fusilli col buco but use any shape you prefer

Instructions 

  • Heat olive in a sauté pan over medium heat. Add thinly sliced shallots and cook for 3 minutes, stirring occasionally, until they start to get some color. Add minced garlic and cook, stirring often, for another minute.
  • Add Calabrian chili paste and tomato paste and combine. Cook for 5 minutes until darkened in color. Pour in wine and scrape up the brown bits on the bottom of the pan. Cook for 2-3 minutes until most of the wine is cooked off.
  • Meanwhile, in a separate pot, cook pasta according to package instructions until al dente.
  • Turn heat to low and pour in heavy cream. Stir until well combined. Add salt and pepper to taste.
  • Once the pasta is cooked, transfer it straight to the sauce. Pour in about 1/4 cup of pasta water and toss the pasta into the sauce. Add more pasta water if needed for the desired consistency. Mix in parmesan cheese until the cheese is melted. Serve with additional parmesan cheese.
