Spicy Gochujang Shrimp Linguine

Ingredients 

Air Fryer Shrimp

  • 1 lb Shrimp, I used frozen raw Argentinian Red Shrimp from Trader Joe's
  • 1 tablespoon Avocado Oil, or other neutral oil
  • 2 teaspoon Lemon Juice
  • 1/2 teaspoon White Pepper, can use black pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Spicy Seasoned Salt, I used Momofuku Spicy Seasoned Salt; can substitute regular salt but add additional seasoning such as cayenne as desired

Gochujang Pasta

  • 1 lb Linguine, reserve 1 cup of pasta water
  • 1 tablespoon Extra Virgin Olive Oil
  • 6 cloves Garlic, thinly sliced
  • 4 Green Onion, sliced; divide dark top section to serve and lighter bottom section to cook in sauce
  • 2 tablespoon Gochujang Paste, more or less to taste
  • 1/2 cup White Wine
  • 1/2 teaspoon Red Pepper Flakes, optional; adjust to taste
  • 1/2 cup Whole Milk, use half and half or heavy cream for a creamier sauce
  • 1 tablespoon Butter
  • 1/4 cup Parmesan Cheese, freshly grated to serve

Instructions 

Air Fryer Shrimp

  • If using frozen shrimp, rinse with water to remove any ice. Place in a large bowl and add all ingredients. Toss together. Place in air fryer and cook for 8 minutes at 400 degrees F.
  • Notes: 1. Every air fryer is different. This time and temperature worked well for my particular air fryer and type of shrimp I was using. 2. If using thawed shrimp then decrease cooking time by 2-3 minutes.

Gochujang Pasta

  • Cook pasta to al dente according to package instructions in salted water. Reserve about 1 cup of pasta water.
  • Meanwhile, heat olive oil in a large high rimmed sauté pan over medium heat. Add sliced garlic and the sliced light green bottom section of the green onion. Cook for 2-3 minutes stirring often so they don't burn.
  • Add gochujang and stir to combine. Cook for 3-5 minutes until the gochujang caramelizes. Pour in white wine to deglaze the pan. Scrape the bottom of the pan with a wooden spoon to release any stuck bits. Cook for a few minutes until the liquid is mostly absorbed. Optionally add red pepper flakes and stir to combine.
  • Turn heat to low. Pour in milk and stir to combine. Simmer for another 2-3 minutes. Add cooked linguine and butter. Stir until everything is combined well and the butter is melted. Add reserved pasta water as needed until the sauce reaches your desired consistency.
  • Mix in air fryer shrimp. Serve immediately with freshly grated parmesan cheese and the sliced dark green top section of the green onion.

    I saw this recipe and it screamed to me to try this! I followed the steps except I used Anthony Boudain’s XXX seasoning we make per his recipe in place of the seasoned salt. Used half and half instead of milk. Let me say that it was outrageously delicious and very easy to prepare! Husband loved it! Kudos for a fantastic blend of spices that brought just the right amount of heat to the dish without overpowering it!
