This sheet pan recipe is part of the April One Pot Series I’m doing on TikTok. I love to cook, but I was honestly so excited and somewhat relieved because this recipe requires hardly any prep work or cooking! Just toss ingredients onto a sheet pan, bake, and have an extremely flavorful dinner 30 minutes later. This recipe is easily customizable by adding additional seasoning, veggies, or some protein like chicken or sausage. I hope you enjoy this super easy sheet pan caprese gnocchi! Feel free to let me know if you try it!

Sheet Pan Caprese Gnocchi
Equipment
Ingredients
- 20 oz Cherry Tomatoes, slice in half if large
- 16 oz Gnocchi
- 3 tablespoon Extra Virgin Olive Oil, additional to serve
- 1 tablespoon Balsamic Vinegar
- 1/4 teaspoon Garlic Powder
- 1/2 teaspoon Italian Seasoning
- Kosher Salt & Black Pepper, to taste
- 8 oz Burrata Cheese
- Fresh Basil, cut into strips; to serve
- Flaky Salt, optional; to serve
Instructions
- Preheat the oven to 400 degrees F. Dump the cherry tomatoes and gnocchi on a rimmed half-sheet pan.
- Whisk together olive oil, balsamic vinegar, garlic powder, and italian seasoning. Drizzle over the tomatoes and gnocchi. Season with salt and pepper to taste. Toss everything together well.
- Place the sheet pan in the oven for about 30 minutes or until the tomatoes start to burst and the gnocchi gets a little crispy.
- Serve each portion in a shallow bowl. Place burrata on top, drizzle with olive oil, and top with fresh basil and a sprinkle of flaky slat.
