This sheet pan recipe is part of the April One Pot Series I’m doing on TikTok. I love to cook, but I was honestly so excited and somewhat relieved because this recipe requires hardly any prep work or cooking! Just toss ingredients onto a sheet pan, bake, and have an extremely flavorful dinner 30 minutes later. This recipe is easily customizable by adding additional seasoning, veggies, or some protein like chicken or sausage. I hope you enjoy this super easy sheet pan caprese gnocchi! Feel free to let me know if you try it!

Ingredients

Instructions

  • Preheat the oven to 400 degrees F. Dump the cherry tomatoes and gnocchi on a rimmed half-sheet pan.
  • Whisk together olive oil, balsamic vinegar, garlic powder, and italian seasoning. Drizzle over the tomatoes and gnocchi. Season with salt and pepper to taste. Toss everything together well.
  • Place the sheet pan in the oven for about 30 minutes or until the tomatoes start to burst and the gnocchi gets a little crispy.
  • Serve each portion in a shallow bowl. Place burrata on top, drizzle with olive oil, and top with fresh basil and a sprinkle of flaky slat.
