In February 2022, I created an Orzo Recipe Series on TikTok where I created 8 new orzo recipes during the month of February. It was definitely a fan favorite! In honor of the 1 year anniversary of this series, I am creating a February Orzo Series Part 2!
This Greek Salmon Orzo is the seventh recipe in my new series and I hope you love it!

Greek Salmon Orzo Recipe Details
Salmon Ingredients
1 lb Salmon or one 4-6 oz filet per person - You can use fresh or frozen filets. I recommend thawing your salmon in the refrigerator overnight, but placing it in a bag in a bowl of cold water will work for thawing your salmon faster.
1 tbsp Lemon Juice - I always recommend freshly squeezed!
3/4 tsp Dried Oregano
1/2 tsp Dried Dill
1/2 tsp Garlic Powder
1/2 tsp Salt more to taste
1/4 tsp Black Pepper more to taste
Salmon Instructions
In a small bowl, mix together all salmon ingredients. Brush onto the salmon filets.
Cook the salmon in a pan over medium heat for about 4 minutes a side or until an internal temperature of about 130 degrees F.
You can also air fry your salmon! I chose this method so I was able to get a jump start on my orzo while the salmon cooked. To air fry the salmon, cook at 375 degrees for about 8 minutes.
No air fryer? No problem! You can also use a regular conventional oven to bake your salmon. Bake at 400 degrees for 10-15 minutes or until an internal temperature of about 130 degrees F. You may need to adjust the air fryer or regular oven time and temperature because every appliance is different. It also depends on the size of your salmon.
Orzo Ingredients
2 tsp Oil - I used oil from the jar of sun-dried tomatoes for some extra flavor but you can also use extra virgin olive oil
1 Shallot minced
4 cloves Garlic minced
1 cup Orzo - add your orzo uncooked – super easy! The orzo will toast in the oil and then cook in the chicken broth.
1/3 cup Sun-dried Tomatoes
2 cups Chicken Broth - I often use water and some Low-Sodium Better Than Bouillon Roasted Chicken Base. I use chicken broth in many of my recipes and a jar still lasts for months. I have found it’s much more convenient to keep a jar of it on hand rather than buying cans or cartons of chicken broth all of the time.
1/2 tsp Dried Oregano
1/2 tsp Dried Basil
1/4 tsp Dried Dill
1/4 tsp Dried Parsley
Salt & Pepper to taste
1 Lemon - if you have a particularly large lemon or don't want a super strong lemon flavor, you could always start with less than 1 lemon.
1/4 cup Kalamata Olives - olives add a nice salty and briny pop to this dish
1/2 cup Fresh Parsley - load up on the fresh herbs to really add to the bright and fresh flavor
1/4 cup Fresh Mint - load up on the fresh herbs to really add to the bright and fresh flavor
1/4 cup Feta - crumble on some more to serve!
Orzo Instructions

Heat the oil in a large high-rimmed pan over medium heat. Add the shallot and garlic. Cook for 2 minutes, stirring often. Then add the uncooked orzo and sun-dried tomatoes. Stir to combine and let the orzo toast for 2 minutes.
Pour in the chicken broth and season with the dried oregano, dried basil, dried dill, dried parsley, and salt and pepper to taste. Bring to a boil then lower the heat to simmer. Cook, stirring occasionally to prevent the orzo from sticking. It will take about 15 minutes for the orzo to cook. Add additional chicken broth if it absorbs before the orzo is cooked.
Once the orzo is cooked, add the lemon zest, lemon juice, olives, fresh parsley, and fresh mint. Stir until well combined. Add the feta and stir to combine.
Serve immediately with the orzo on the bottom and a salmon filet on top. Serve with additional lemon juice, feta, fresh herbs, and salt and pepper as desired.
